For 20 parathas, the small Indian breads

Preparation time: 10 minutes Cooking time: 10 minutes Ingredients : Whole wheat flour: 1.5 kg Ghee (or homemade clarified butter): 20cl Water Salt

Step 1: In a salad bowl, put the flour and a pinch of salt. Then pour in 10cl of clarified butter (or ghee) and 50cl of water. Mix gently until you obtain a smooth dough. If necessary, pour in a little more water to obtain a good consistency. Step 2: Then cut the dough into 20 pieces of 200 grams and let them rest for a few minutes. Using a rolling pin, flatten each piece of dough into a 0.5 to 1 cm thick circle. Using a brush, coat the dough with clarified butter (or ghee). Step 3: Then cut the circle of dough into strips about 3 cm wide. Using both hands, overlap the strips of pasta lengthwise and roll them into a snail shell shape. Step 4: Then lay the dough flat so that you can see the snail shape, and flatten again with the rolling pin. Step 5: Finally, heat a pan with clarified butter and cook the parathas. Enjoy them with any curry, or as a brunch with an egg and chutney!
